Nutritious, Beginner-Friendly Banana Bread

This banana bread recipe is:

  • Packed with protein
  • Free from refined sugar (aka table sugar)
  • Suuuuper easy (if you have the right ingredients)

TRIGGER WARNING: bananas were harmed (brutally) in the baking of this bread

INGREDIENTS

  • 1/2 cup all-purpose flour
  • 1/2 cup coconut flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 3 ripe to over-ripe bananas
    • If the bananas are too firm, the bread will be way less sweet; I hate to be a colorist, but yellow and brown bananas only. Bruised and battered bananas are also welcome. Make sure that the bananas are not too ripe, if they are oozing and falling apart in your hands, be kind and return these precious berries to the earth.
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 2 teaspoons vanilla extract

INSTRUCTIONS

  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease an 8” x 4” loaf pan (or line with parchment paper)
  3. Add flours, cinnamon, baking powder, and salt to a large bowl and mix; set aside
  4. Peel the bananas and massacre them (I mean “mash” them) with a fork until mangled, mushy, and unrecognizable
  5. Add the eggs, coconut oil, honey, vanilla extract, and bananas into the batter
  6. Mix until combined
  7. Bake for 45 to 50 minutes (checking after 40 minutes) or until the mixture is fully cooked/ slightly browned around the edges (poke a hole in the middle to check)
  8. Thank your bananas for their service to the cause
  9. Enjoy warm or cool
